Pork products in USA
Pork products are eaten in many countries, including in the United States of America and can be found under different forms: cooked, or under the form of the Italian prosciutto that is cured, it can be also smoked or some of the products are made under a combination of these products. For example most Americans love sausages. For example in Louisiana it is widely produced the Andouille sausage, a spicy type of sausages, because 2 of the ingredients used are pepper and onion slices. Barbeque spareribs are also one of the pork products most loved, and any barbeque party isn’t complete if it hasn’t got barbeque spareribs. They are so loved because the meat around each of the rib is tenderness, so it can be prepared very quickly.
Bacon is also very much used in the American cuisine, but few know that the Americans take it from the belly of the pig, not as others that take it from the back of the pig. To arrive in this state, the meat is both cured and smoked, so it is twice treated. Usually we like bacon in the morning, at breakfast. Pork cracklings are also a crispy part of pork products, like bacon, and they are made for the skin of the pork. You may think that the skin of pork has also some fat, but if you let the slices of the skin roast slow, the fat will melt. To be tastier, the pork cracklings can be found with many flavors, like barbeque or cheese. Many varieties of salami are also used, because you can add them in sandwiches or as an ingredient of pizza. Salami are most of the time made by curing, some of them up to 6 months, like the Genoa salami.
Of course that we can’t talk about pork products without mentioning the ham. The ham is made from the back legs of the pork, so sometimes it can have also the bone. Different countries use different ways to make ham, it can be dry cured and also it can be served uncooked or cooked. But when we think about pork products it wrong to think only about the meat, because lard is also a product we obtain from the pork. The lard is actually the fat of the pig, so it can be used both on kitchen (for cooking), or as a replacement of butter.
